The Stung Treng Provincial Department of Tourism, funded by Swisscontact, successfully concluded a comprehensive vocational training program in Cooking.
On the afternoon of February 13, 2026, the department hosted the closing ceremony and certification conferment for 14 trainees (including 10 women). The event was presided over by Mr. Un Porsoeun, Director of the Stung Treng Provincial Department of Tourism. The participants represented various tourism and hospitality enterprises, demonstrating a collective commitment to enhancing regional service standards.
The curriculum encompassed 12 theoretical modules and essential technical kitchen proficiencies, specifically focusing on:
1. Specialized cooking methodologies for diverse cuisine types.
2. Standardized recipe management, including precise measurement and weighing protocols.
3. The aesthetics of food presentation and plating.
4. Cost management and resource optimization.
5. Food hygiene and safety standards.
6. Technical documentation of standardized recipes.
7. Environmental sustainability, focusing on plastic reduction and efficient kitchen waste management.
During the practical sessions, trainees gained hands-on experience in preparing an array of sophisticated dishes, ranging from traditional Khmer Amok and Beef Lok Lak to specialized seafood appetizers and complex sauce formulations for both raw and cooked proteins.
Under the expert guidance of Mr. May Meta, Provincial Department Trainer, and Ms. Sarim Sopanya, Private Sector Trainer, all participants successfully met the rigorous requirements for certification. This initiative represents a successful tripartite collaboration between the Hospitality Kampuchea (HoKa) program of the Ministry of Tourism, the Stung Treng Provincial Department of Tourism, and the Skills Development Programme (SDP) implemented by Swisscontact.
